YO! Sushi streamlines facilities management

By Retail Technology | Thursday August 22 2013

Japanese chain improves management of its restaurant assets, subcontractors, maintenance and servicing

YO! Sushi has selected Aeromark to provide a single integrated system to manage assets and facilities maintenance.

The smooth operation of the vast range of appliances and equipment used throughout the restaurants is essential to restaurant efficiency and for the best customers. This includes fridges, freezers and cookers, air conditioning units and lighting and the focal point of the restaurant, the conveyor belt.

Maintaining business as usual

YO! Sushi employs a range of service and facilities management contractors to maintain these assets and managing the mixture of planned and reactive maintenance across a range of suppliers was proving to be very time intensive.

Mike Bonaker, YO! Sushi facilities manager, commented: “Our restaurant concept is simple; take a seat, select the Japanese inspired dishes you’d like from the moving conveyor belt in front of you or order hot food from a YO! Sushi team member, eat and enjoy, then pay for the food you’ve eaten. Keeping the restaurant equipment and facilities running smoothly however isn’t quite as simple and we looked to technology for a solution.”

The hospitality company went out to the market looking for a system that would improve the manageability and the visibility of its assets, its subcontractors and its planned and reactive maintenance and servicing.

Single centralised management system

Bonaker explained: “We selected Optimatics from Aeromark as it provides a single system to manage our assets, our facilities and our contractors. This will enable us to provide faster response times to our restaurants and will give us greater visibility of subcontractor performance, helping us to identify areas for improvement and efficiency gains."

He added: "One immediate reduction will be in our management time and the associated administration, both of which will reduce considerably."

Growing from a London-only sushi brand to an international chain with more than 70 restaurants worldwide, YO! Sushi now serves more than five million customers a year throughout the UK and across the globe.

The next issue of Retail Technology magazine will feature an interview with YO! Sushi’s IT manager Billy Waters about its recent work to also mobilise front-of-house staff and processes. Contact us to subscribe.
